Quiche Lorraine with Spinach

You don’t have to be a gourmet chef to judge how appetizing and flavorful this simple Quiche is. It is one dish which will never fail to impress your guests. I am so thankful to my sister for sharing this recipe with the family. My boys will devour two whole pies in minutes! I usually double or triple this recipe and make four Quiche at a time. Troy (hubby) loves this in the morning when he is rushing to get out the door for work.

This is also a great recipe for the kiddos to make. Their favorite part is molding the crust around the dish.

Crust
You will need one pie crust, I use Pillsbury refrigerated pie crust.
 
Quiche Lorraine - Florentine

Ingredients

  • 1 cup roughly chopped fresh or drained frozen spinach
  • 8 slices bacon, crisply cooked, crumbled or real bacon bits (1/2 cup)
  • 1 cup shredded Swiss or Gruyere cheese
  • 1/4 cup finely chopped green onion
  • 3 large eggs
  • 1 cup half-and-half
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/8 teaspoon ground red pepper (cayenne)

Instructions

  1. -Preheat oven to 425. -In pie shell, combine bacon, spinach, cheese and onion.
  2. -Separately, mix together eggs and milk, add salt and pepper. Pour into pie shell.
  3. -Place quiche on baking sheet and put in the oven. Bake 15 minutes at 425, then reduce heat to 350 and bake 30 minutes more. It’s done when a knife inserted comes out clean.

    I love this – and have to tell you, I just recently discovered the beauty of the Pillbury crust.

    I am not ashamed to tell you I currently have five in my deep freeze – in preparation of the holiday season!
