I used to laugh when moms of teen boys would offer helpful advice and try to prepare me for a time when our boys would attempt to eat us out of house and home. Never could I have imagined the reality of a growing boys escalating appetite until I was faced with it myself. We are here, we are that family with four boys proclaiming that they are hungry 20 minutes after their last meal. My new mission has been finding meals and snacks that will hold these boys over, keeping them full and happy for more than 20 minutes.

I’ve been searching for and creating meals and snacks with lots of protein, healthy carbs and fiber. My boys are active, they burn off food quickly and need the protein and healthy carbs to sustain them while fiber keeps them feeling full. One such snack is perfect for our hot Louisiana summers and perfect for summer snacking.

When shopping at our local Walmart, I always make sure to pick up plenty of Yoplait®, some in the fridge for the boys to grab and go and extra to incorporate into robust wholesome snacks. One of our favorite snacks to make with Yoplait® are blueberry yogurt bites. These mini yogurt bites are the perfect recipe to make with your kids, super easy,  mess free and exceptionally tasty! Our youngest doesn’t like Greek yogurt but Greek yogurt is ideal for this recipe, we use regular blueberry Yoplait®

Protein Packed Blueberry Yogurt Bites

Ingredients

  • 2 1/2 cups of oats & honey granola - we like to use the Bear Naked brand and the Nature Valley Oats 'n Honey Protein Granola for my boys with nut allergies.
  • 1/4 cup Hemp Seeds - Hempseed has an excellent content of omega-3 and omega-6 fatty acids.
  • 1/4 cup Organic Coconut Oil or melted butter
  • 3 containers (5.3 oz each) Yoplait® Greek blueberry yogurt or children's blueberry yogurt
  • 1/4 cup fresh blueberries
  • 2 tablespoons oats & honey granola to sprinkle over bars

Instructions

  1. Heat oven to 350°F. In large bowl, mix 2 1/2 cups granola, 1/4 cup hemp seeds and the coconut oil or melted butter. Firmly press in bottom of ungreased 8-inch square pan. Bake 10 minutes. Cool on cooling rack. When cool, freeze about 5 minutes or until cold.
  2. Spoon yogurt over crust; gently spread to cover. Sprinkle with blueberries and crushed granola. Freeze about 3 hours or until firm.
  3. Remove from freezer 10 minutes before cutting. To make bars, cut into 5 rows by 2 rows. Wrap each bar tightly in plastic wrap. Store in freezer.

This recipe can be customized and made to fit your families needs, the possibilities are endless! Mix in nuts or a trail mix if your children do not have nut allergies. Chocolate chips, yogurt raisins, and sprinkles sprinkled on top are more great options. You could even allow each child to make their own mini frozen granola cups, a great after school snack! If your bites don’t come out perfectly or if you end up with leftovers, allow to sit and simply mix and you have the most decadent Muesli! The next time your in your neighborhood Walmart, be sure to stock up on Yoplait® and try this simple recipe with your kids!
