Avocado, Turkey, Brie & Fig Panini Recipe #ILoveAvocados

Growing up, the fruit of choice in our home was avocados. In fact my grandfather had the largest avocado tree I have ever encountered, right in his backyard. The tree was full of plump, green aguacatesAvocados from Mexico gets it and understands our love for this nutritious and delicious fruit! Mexico is now the largest producer and consumer of avocados in the world.

There are so many ways to enjoy this nutty, creamy, nutrition filled fruit during the summer months. We love to eat sliced avocados lightly sprinkled with salt and wrapped with a warm corn tortilla or combined with a mango salsa or even in our smoothies.

A few healthy reasons to eat avocados {one serving of avocado provides}:

  • A source of monounsaturated fat and omega-3 fatty acids.
  • A source of antioxidants, including Vitamin E.
  • A source of fiber, Vitamin K and folate.
  • A source of many essential minerals including potassium, thiamin, iron, riboflavin, niacin, magnesium and manganese.

A few educational facts about the beloved avocado.

  • Though it is often thought to be a vegetable the avocado is actually a fruit.
  • The avocado is sometimes referred to as the “lizard pear” because of its form and the rough appearance of its skin.
  • The world’s first avocado was grown and cultivated in Mexico around 5,000 B.C.E
  • The avocado tree was first introduced to the United States in 1833 by Judge Henry Perrine who sent trees from Mexico to Florida.
  • Mexico is the only place in the world where avocado trees naturally bloom four times a year.

Now for two of our favorite avocado recipes…


Avocado, Turkey, Brie & Fig Panini


  • 1 ciabatta roll
  • thinly sliced turkey
  • sliced Brie cheese
  • 2 ripe avocados, peeled, seeded and each cut into thin slices
  • Fig spread (I like the spread from Whole foods best or you can make your own)
  • Extra greens optional


  1. Open bread and spread a thin layer of fig on each side of the ciabatta
  2. Layer turkey, cheese and sliced avocados.
  3. Close sandwich cook in a heated sandwich grill or panini maker 3 to 5 minutes or until cheese is melted and sandwiches are golden on both sides.



Avocado, Turkey, Veggie Wrap


  • 1 whole wheat tortilla
  • 2-3 tablespoons red pepper hummus
  • 3 slices low-sodium deli turkey
  • 1/4 avocado, sliced
  • Cucumber slices
  • Cherry tomatoes sliced


  1. Spread tortilla with hummus, then layer on turkey, avocado, tomato and cucumber slices. Roll, then slice. Makes 1 wrap.
